This black bean-mango salsa has two major things going for it right off the bat: It takes just minutes to prep and it keeps well in the fridge. Besides, the base makes it a nutritional powerhouse, since black beans are an overlooked source of plant-based protein, minerals, and fiber (at eight grams of fiber per half-cup). Scoop up this flavorful salsa with tortilla chips, whole-grain crackers, or just a spoon! Each serving will provide around six grams of fiber.

medium mango, peeled and diced

cup chopped cilantro

small red onion, diced

jalapeño, diced
Juice of one lime, about 3 Tbsp.

tsp. ground cumin

PreparationStir ingredients together until well mixed. Taste and adjust lime or salt if needed. Serve with tortilla chips or crackers or enjoy as a side dish.
