Luckily, this apple pie oat chia pudding supplies a whopping 50% of your daily fiber needs thanks to a gut-friendly trifecta of oats, chia seeds, and apples. PreparationStep 1Whisk oats, chia seeds, milk, one teaspoon of the maple syrup, and cinnamon in a bowl until well combined. Let sit for 5 to 10 minutes, then whisk vigorously again to prevent chia clumps from forming. Transfer the oat mixture to a glass container and refrigerate overnight.
Step 2In the morning, heat a small pan over medium heat. Once the pan is hot, add the coconut oil, coating the pan evenly. Next, add the cubed apple and a few shakes of cinnamon. Sauté until the apple softens, about seven minutes.
Step 3Transfer the oat chia pudding to a bowl, then top it with Greek yogurt, sautéed apples, and the remaining one teaspoon of maple syrup.
