Ginger, Turmeric & Sesame Crackers

Ginger, Turmeric & Sesame Crackers

These crackers combine anti-inflammatory spices ginger and turmeric with omega-3-rich flaxseeds for a satisfying, gluten-free and low-histamine-friendly snack. Easy to make in advance and they travel well.

Recipe

Gluten-Free, Vegetarian

Ingredients

1¼ cups flaxseed (linseed) meal
½ cup sesame seeds
1 tsp grated fresh ginger or ½ tsp ground ginger
1 tsp ground turmeric
½ tsp sea salt
1 egg
1½ tbsp extra-virgin olive oil

Method

Preheat the oven to 175°C. Grease a baking tray.
Combine the flaxseed meal, sesame seeds, ginger, turmeric and salt in a large bowl.
In a small bowl, whisk the egg and then slowly add the olive oil in a thin stream while still whisking. Pour the egg mixture into the dry ingredients and mix to form a firm dough. If it is too dry to roll out, add some filtered water.
Roll out the dough on a sheet of baking paper to a thin rectangle about 25cm×35cm. Place the prepared baking tray face down over the dough, then invert both together so the dough is in the middle of the tray and the paper is on top. Peel off the baking paper and cut the dough into 5cm squares using a sharp knife.
Bake for 15-20 mins until crisp. Allow to cool completely before eating.
Store in an airtight container for 3–4 days or in the fridge for up to 2 weeks.
