Step 1Melt the coconut oil in the microwave for 10–20 seconds.
Step 2Add the coconut oil, peanut butter, maple syrup, vanilla, oat flour, and salt to a medium bowl. Stir until well-combined.
Step 3Add the crispy rice cereal to the bowl and stir to combine.
Step 4Line a plate or small tray with parchment paper. Roll the peanut butter–crispy rice cereal mixture into 12 balls and place on the parchment paper. Refrigerate for 1 hour or until the balls are firm.
Step 5Place the chocolate chips and coconut oil in a microwave-safe bowl and heat in 20-second increments until the chocolate is just melted.
Step 6Dip the peanut butter–crispy rice cereal balls into the chocolate one at a time to coat, and place the chocolate-covered balls back on the parchment paper.
Step 7Refrigerate for 1 hour or until the chocolate sets.
